Savoury Breakfast Plate

Breakfast plate with roast pumpkin, scrambled eggs, chicken breast, zucchini and pesto

serves 1

Ingredients:

2 eggs
150g chicken breast
100g pumpkin, diced
100g zucchini, sliced
1 heaped tsp pesto
coconut oil
butter
salt

Method:

  1. Preheat oven to 200°C. Toss the pumpkin and zucchini with coconut oil and salt, spread on a baking tray and roast until golden and tender (about 25–30 minutes). This can be done the night before.

  2. Heat a frying pan with a little coconut oil and pan-fry the chicken breast with salt until cooked through and golden. Set aside.

  3. Whisk the eggs in a bowl.

  4. Melt a little butter in a clean pan over medium heat and add the eggs. Gently stir as they cook until soft and just set.

  5. Add the eggs, chicken, pumpkin, and zucchini to a plate.

  6. Finish with a heaped teaspoon of pesto and enjoy straight away.
